The other day I got this really strong urge for Sloppy Joes. I turned to old cookbooks and the internet to find a version that fit me best (don't ask me the criteria. As with all recipe searches, I just knew I'd know when I saw it). I found this recipe and am wishing I still had some in the fridge for leftovers. Hubby loved it, kiddos loved it, and yeah. I was pretty fond myself. I think the trick to this one is a great BBQ sauce. I really like using turkey too, it makes it so much less sinful. Although that being said, ground beef was called for in the original recipe and of course would be a great substitution for the Turkey found in this one. It's just up to your preference.
TIPS & TRICKS
- Put your remaining Tomato Paste in an ice cube tray in the freezer. Once frozen, place tomato-cubes into a zip-lock bag and keep frozen for future use. I hate wasting stuff - and since you don't even use a 1/4 cup of paste in this recipe, it's inevitable that no matter what size of tomato paste can you use, you'll have some extra.
INGREDIENTS
1.5 tsp Olive Oil
1 Green Bell Pepper, chopped
1 Red Bell Pepper, chopped
3 Cloves Garlic, minced
Salt & Pepper
2 lbs Ground Turkey
1 8oz (small) Can Tomato Sauce
3 Tbs Tomato Paste
1 Cup BBQ Sauce
1 Tbs Worcestershire Sauce
1 tsp Hot Sauce (optional)
6 Hamburger Buns
6 Slices Provalone Cheese (optional)
DIRECTIONS
- Heat oil in large skillet. Add peppers and garlic and cook until tender. Season with salt & pepper.
- Add the turkey and cook until done, chopping and stirring with a spoon as you cook.
- Add tomato sauce, tomato paste, BBQ Sauce, Worcestershire Sauce, and hot sauce (if using). Stir and simmer uncovered until thickened (approx 15 - 20 minutes).
- Serve with toasted hamburger buns and top with a slice of Provalone Cheese (if using).
